I really love bread.
There, I said it. In a carb-free, gluten-free, wheat phobic society, I really love bread.
You have Europe to thank for that.
Naturally my bread obsession is completely of the whole-grain, artisan variety. Don’t even try giving me a piece of a white sandwich loaf. Go to any local farmers market now and you are bound to pick up an incredible sourdough, turkish or pane di casa – of whatever variety you prefer. If you don’t have a local famers market with an artisan baker, you can find amazing breads at local bakeries, or try Coles or Woolworths for their freshly baked range (those guys have seriously risen up to meet the demands of bread aficionados). I absolutely love spelt and walnut sourdough, pumpkin and rye sourdough, any wholemeal multigrain sourdough or a spelt or wholemeal turkish.
As a result, it comes as no surprise to many that pairing my bread and breakfast is one of my favourite things to do during the Summer months, where my beloved warm oatmeal creations are put on hold.
Seriously, how can beat an incredible breakfast that can be created in 5 minutes?
So here are 5 creations for this Summer to get you inspired. These are only just top the surface of the amazingness that you can create.
- Smashed peas with mint and cottage cheese
- Cottage cheese topped with sliced figs and a balsamic reduction
- Avocado and Goats cheese with lemon, salt and pepper
- Cottage cheese and natural peanut butter with banana slices and a sprinkle of cinnamon
- Mustardy mushrooms (recipe here)
These may just be the best things since sliced bread.
